RECYCLING & COMPOSTING
We do not use polystyrene foam (Styrofoam). Our full-scale recycling program includes the separation and processing of cardboard, glass, metal, plastic and full-scale composting of organic material.

ELIMINATION OF BOTTLED WATER
As an environmentally friendly alternative to the waste associated with the manufacturing, transport and disposal of conventional bottled water, we installed the NATURA™ water system and discontinued using bottled water.  The NATURA™ system is a countertop machine that triple-carbon filters and UV sterilizes water, which we then serve in reusable carafes (which don't end up in a landfill).

ENERGY EFFICIENCY and PAPER CONSERVATION
We installed Xlerator hand dryers in our employee bathrooms and energy efficient Veltia's in our guest bathrooms. Xlerators use 80% less energy than traditional hand dryers and dry hands in 10 to 15 seconds. Xlerators also halve our paper towel usage, saving paper.

All of these bathrooms also have occupancy sensors, preventing lights from being left on. Strip curtains on walk-in refrigerators and freezers help to effectively control temperatures which allows us to use the least amount of energy.

We have also have numerous Energy Star appliances, including our ice machine and dish machine, they use less energy, save money, and help protect the environment.

WATER CONSERVATION
We have installed Water Efficient Faucet Aerators and spray valves on all of our kitchen hand sinks. These aerators use only a half-gallon to one-and-a-half gallons of water per minute and they maintain a uniform water flow and spray pattern. This simple step will reduce the water consumption of our sinks by more than half.

In addition, the men's bathroom at MOZZA2GO is equipped with a waterless urinal which saves thousands of gallons of water a year.

FOOD
We provide sustainable and locally grown food and offer plenty of vegetarian options.

POLLUTION PREVENTION
We are using the latest in WareWashing technology, which utilizes non-caustic chemistry and 95% less packaging material (and, therefore, transportation) than bulkier liquid detergents. The WareWashing System also lets us allows us to utilize a low-temperature dish machine.

DISPOSABLES
At MOZZA2GO we are using some bio-based To Go containers as well as pizza boxes with nearly 70 to 89% post-consumer recycled content.
